Poor Man’s Potatoes recipe

I first came across this recipe a few years ago and have found it to be a great favourite with everybody who has tried it. I vary the ingredients slightly depending on what I have left over from previous meals and what’s in season but it is easy and incredibly tasty – a winning combination. The ingredients below serve 2.


3 large left over cold potatoes – chop into medium sized pieces

1 medium onion coarsely chopped

4 or 5 mushrooms finely sliced

1 pepper cut into reasonably thin strips – green and red both work well

2 medium eggs                                   

One desert spoon olive oil

1 desert spoon garlic puree

Salt and pepper

Paprika and cayenne pepper – the amount depends on how spicy you want the meal to be but it’s easiest if you pre-mix the two rather than adding separately


In a large frying pan, heat the olive oil and garlic puree and sweat the onion and mushrooms for 3 or 4 minutes until softened. Season to taste.

Sprinkle the potatoes with the paprika and cayenne mix and add them to the onions and mushrooms mix. Fry on a high heat until they have crisped on all sides and warmed through. Add the pepper and cook for another minute or two until the slices have softened but not lost all crunch.

Remove the pan from the heat and break in both eggs. Gently stir the eggs through the hot mixture with a knife taking care to completely break them through the ingredients. Then return to the heat and continue to gently stir until the eggs are cooked.

This is great served with crusty bread and/or a salad.

Tip: if you prefer you can replace the onion with a leek. You can also add some celery for a bit of extra crunch.

If you want to make the final dish richer, once the eggs are cooked add a little cream to the pan and heat for another minute or two. Don’t add the cream before the eggs are cooked or you will end up with scrambled egg.
